Fraîche is a 38 seat restaurant owned and run by Chef Noah Tucker and Chef Anthony Joseph. We will introduce a weekly changing seasonal based menu offering three, four or five courses, with a modern simple approach to cuisine and hospitality. Fraîche is advantageously placed in the Jordaan on the Westerstraat in Amsterdam.
The focus of Fraîche is the cuisine, having the chefs as the owners every aspect of the restaurant is controlled by us. Our goal is to use ingredients and supplies from local companies. That is why we pride ourselves with a daily routine of biking through Amsterdam to personally hand pick up our fish, meat and vegetables, as well as sourcing a considerable amount of our produce from local farmers and small specialized growers in Europe. Products are soured as local as possible, this way we can build strong relationships with the suppliers making sure we get the freshest seasonal products.
Noah Tucker has worked in some of the best kitchens in the United States from New York City to San Francisco including Oceana, and Michael Mina. Throughout his professional culinary career Noah has immersed himself in all aspects of the business beginning with service in the military and completing an undergraduate degree in Culinary Arts at the Culinary Institute of America, Noah has devoted his life to a love of cooking.
Anthony Joseph began his career at the age of sixteen, and has honed his skills as a Chef working with and for the likes of Albert Roux, Marco Pierre White, Gordon Ramsey, Eric Chavot and Andrew Turner. Anthony’s career has led him to working with some of the best Chefs in England and its directly reflected in his culinary skill, style and professionalism
